Winfried Bönig was appointed cathedral organist in Cologne in 2001. From 1998 to 2025 he led the "Catholic Church Music" programme as professor of artistic organ playing and improvisation at the Hochschule für Musik und Tanz Köln; since 2025 he has been teaching organ and liturgical organ playing at the Robert Schumann Hochschule in Düsseldorf.

Bönig has been and continues to be the performer of numerous world premieres of works dedicated to him by composers including Enjott Schneider, Jean Guillou, Naji Hakim, Stephen Tharp, Colin Mawby, Robert HP Platz, and Daniel Roth. His very first CD - featuring organ works by Dietrich Buxtehude, released in 1988 - was received with great enthusiasm by music critics across Europe and America. Many further recordings followed, both as organist and conductor, building up an extensive discography spanning a wide range of repertoire. Particular attention was drawn to his recordings of the organs in Cologne Cathedral and a CD featuring his own transcription of Bach's Goldberg Variations.
